Banana Crumble Muffins

Does anyone else always keep bananas in the house? I rarely eat them if they aren't in a smoothie, muffin, or bread. Needless to say I have what I think is a almost perfect banana muffin recipe. I thought that I would share it with you! I have tried many different recipes with variations of ingredients. This is one of the easiest, with almost always have on hand ingredient recipes I have found and "perfected". They always come out moist and crumbly.

So here we go!


Crumb Muffins

 
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3 bananas, mashed

  • 3/4 cup white sugar

  • 1 egg

  • ⅓ cup butter, melted

  • 1 teaspoon vanilla

  • 1/2 cup chopped walnuts (optional)

For the crumble:

  • 1/2 cup packed brown sugar

  • 1/2 cup oats

  • 2 tablespoons all-purpose flour

  • 1/4 teaspoon ground cinnamon

  • 2 tablespoon butter

 
  • Step 1 Preheat oven to 375 degrees F. Prepare your muffin tin with 12 papers.

  • Step 2 In a large bowl, mix together flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg, vanilla, and melted butter. Stir the banana mixture into the flour mixture just until well combined. Fold in the walnuts. Spoon batter into prepared muffin cups.

  • Step 3 For the topping in a small bowl, mix together brown sugar, oats, 2 tablespoons flour and cinnamon. Cut in 2 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

  • Step 4 Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Have you tried Mexican Vanilla? So good! I was introduced a few years back and its almost all I use now! Also, a tip I have found is to not over mix your batter. It doesn't need whipped!
